What makes a good cookbook? It’s the question I asked on my instagram a few weeks ago as well as inside my creative community and it was so interesting to hear everyone’s thoughts. Some people felt that it’s all about the recipes which need to be delicious, easy and creative. Others believed that engaging writing was what set a good cookbook apart from a mediocre one, and yet others thought it was all about the food photography.

I believe a great cookbook should have all three - photos that make me WANT to cook, recipes that sound delicious, yet achievable and writing that warms my heart. Ryan and Adam, also know as Husbands That Cook, have just released their debut cookbook and it has everything a wonderful cookbook should have! My long term blog readers and my instagram tribe members know that I set off on a 5-week trip through South America last summer. It was a really important trip that allowed me to connect to my roots and discover an important part of my identity. The trip also enabled me to meet the only (!!!!) other Colombian food blogger I know - Julian from Historias del Ciervo. We'd been instagram friends for a few years during which I gleefully watched his following grow exponentially and rejoiced when he was nominated for the Saveur Blog Awards in 2016. He is - to date, as far as I'm aware - the only South American blogger EVER to be nominated by Saveur. Can you imagine how inspiring that is? HUGELY!

QUICK, EASY, VEGAN! Part 1 - May I present you with the best vegan muffins I have EVER made? Now, please don't take my word for it, but instead ask the man and the boy in my life, our neighbours, their children, plus the guys at BBC World Service. See they ALL gulped these muffins down like there was no tomorrow and begged me to make more! I made 48 in total in the space of a week, insane isn't it?! But it kinda worked for me cuz I hade A LOT of Halloween pumpkin left-overs to use up ;). Know what I'm sayin'!!!

Anyway, I feel this muffin recipe will work really well for those of you celebrating Thanksgiving - as a sort of Thanksgiving breakfast treat kinda thing - as well as those of you who just dig pumpkins, full stop. Once baked, these muffins can be eaten on the spot or frozen to be enjoyed throughout the weeks to come. Whatever works for you!
