For me the best recipes are easy, vegan, quick and SO good, you can’t help but make them again and again and again! Today’s vegan green goddess sauce recipe, which I’ve developed in collaboration with GEM® Avocado, fits this criteria perfectly. It’s the kinda, throw-it-together-last-minute-sauce that ALWAYS comes out tasting delicious, even if you get a few of the measurements wrong, swap one herb for another, or add some extra pepper for good measure. It’s not precious or precise, though I’ve written it down in the best version that I know so that you can make the green goddess sauce, tinker with it and then make it even better ;).

What makes this pretty green sauce so lush is the addition of the GEM® Avocado, which is a rare, slightly nuttier, creamier and smoother avocado than other varieties. It’s larger than the more common avocado varieties on the market (hooray) and super easy to scoop out due to its thicker skin. A further bonus is that it comes ripe and ready to eat. The GEM® Avocado is only available at supermarkets for a limited time from late September until late December, so you gotta be quick ;).

Not sure how to find the GEM® Avocado? GEM® Avocado has got gold-speckled skin (see images below), is sold in packs of two and clearly branded with the GEM® Avocado name, so you can’t miss it. It’s a GEM® of an avocado that I know you’ll love adding to your meals.

VEGAN GREEN GODDESS SAUCE WIH GEM® AVOCADO

Preparation time: 5-6 minutes

Serves: 3-4 as a sauce 


INGREDIENTS:

1/2 GEM® avocado (seed and skin removed)

1/4 cup (40g) shelled hemp seeds

4tbs of fresh lime juice (about 3 limes)

1/2tbs maple syrup

1.5tbs apple cider vinegar

2tbs olive oil

About 40g (1 packed cup) fresh parsley, washed

Around 15g (1/2 packed cup) fresh coriander, washed

1 garlic clove, peeled

1/2tsp salt

a pinch of black pepper

1tbs water (or 1-2 more if you want the sauce to be a little bit runnier)


INSTRUCTIONS:

Mix all the ingredients in a high speed blender until smooth and fully combined. Add a little bit more water if you prefer a runnier consistency and enjoy!

Serve with a salad as a salad dressing, as a dip with your favourite crudites or crusty bread or - as I did - as a sauce over roasted seasonal veg and pan fried crispy tofu cubes. In short, this easy green goddess sauce goes with pretty much anything!

Leftovers can be kept in the fridge for 2 days.

Tip 1: Don’t like coriander? Leave it out or replace it with extra parsley or basil.

Tip 2: haven’t got hemp seeds? Again just leave it out or replace with sunflower seeds.
