3 EASY HIGH PROTEIN VEGAN GREEN SALAD RECIPES

If you’re on the lookout for easy, healthy, high protein vegan salads that actually fill you up, you’ve come to the right place!

When the weather warms up or you’re craving something light and fresh, nothing beats a crisp, vibrant salad. But if you’re aiming to hit those protein goals while keeping it plant-based, you’ll know it can be a little tricky to find salads that are delicious, satisfying and protein-packed.

That’s where the three easy high protein vegan green salads below come into play. Each one is loaded with plant-based protein from simple, accessible ingredients, plus a few surprise additions to keep things interesting. Fresh, flavourful, and full of texture, these salads are proof that healthy vegan recipes can be both nourishing and seriously delicious.

High protein super salad

 

HIGH PROTEIN SUPER SALAD

Preparation time: 10 minutes

Serves: 4

For those of us looking to add more fibre and protein to our diet. The dressing includes silken tofu (my secret ingredient) which is full of plant-based protein, and we then stack more protein into the salad by including edamame beans, peas and hemp seeds. So many flavours and textures going on here that work together beautifully.

INGREDIENTS FOR the salad dressing:

300g silken tofu (liquid gently removed)
2 tbs tamari 
2 tbs sesame oil
1/3 cup tahini
juice of 2-3 lemons
salt to taste


Ingredients for the salad:

1 whole cucumber, sliced
1-2 little gem lettuces, washed and roughly chopped
1-2 good handfuls of edamame beans
1-2 good handfuls of peas
1 good handful of mint leaves
1 good handful of coriander leaves
1-2 tbs hulled hemp seeds
1 tbs sesame seeds
a drizzle of chilli oil to finish

INSTRUCTIONS

Place the ingredients for the dressing in a high speed blender and blitz until smooth. Add salt to taste.

Spread the dressing over a large plate, add the salad ingredients and enjoy!

(You’ll have more dressing here than you probably need, so save leftovers in the fridge for up to 3-4 days)

High protein vegan Caesar Salad

 

HIGH PROTEIN VEGAN Caesar Salad

Preparation time: 30 minutes

Serves: 2-4

A very loose vegan twist on Caesar Salad, originally created to celebrate St Patrick’s Day!


Ingredients for the salad:

1-2 little gem lettuces, washed and chopped or torn
a drizzle of olive oil to finish
some dill (optional)


Ingredients for the tofu ‘bacon’:

250g extra firm tofu, pressed then crumbled
5 tbs tamari
2 tbs maple syrup
2 tbs tomato puree
1/2 tbs olive oil


Ingredients for the ‘Caesar’ dressing:

1/4 cup yoghurt (Greek or unsweetened soya)
1/4 cup tamari
1/4 cup lemon juice (roughly juice of 1.5 lemons)
salt to taste (roughly 1/2 tsp)

INSTRUCTIONS

Preheat the oven to 200C.

Combine the tofu bacon ingredients in a bowl. Spread the marinated tofu evenly on a lined baking tray. Bake for 15 minutes, then stir and bake for another 10 minutes so the tofu bacon is crispy, but not burned.

Whilst the tofu bacon is in the oven, prep the dressing by combining the dressing ingredients in a bowl.

You can toss the salad leaves in the dressing or spread the dressing on 2 plates like I did in my recipe reel, whatever works best for you.

Top the dressed salad with the bacon (you will have some extra bacon) and finish with the dill and olive oil!

High protein Asian inspired chopped green salad

 

HIGH PROTEIN ASIAN INSPIRED CHOPPED GREEN SALAD

Preparation time: 10 minutes

Serves: 2-4

This recipe has been on repeat in this household for YEARS and if you scroll down my Instagram feed, you’ll see it crop up again and again. That’s because it’s quick and easy to make, utterly delicious and packed full of plant-based protein!

Ingredients for the salad:

1 large cucumber, seeded and thinly sliced
150g edamame beans
5-6 spring onions, finely chopped
30g chopped parsley or coriander
280g extra firm tofu, pressed and cut into small cubes
1/2 cup/ 90g toasted pine nuts

Ingredients for the dressing:

3 lemongrass stems, white part removed, finely chopped
60ml/1/4 cup brown rice vinegar
60ml/1/4 cup lime juice
4tbs maple syrup

Instructions:

Combine the dressing ingredients and pour over the salad just before serving

Salt to taste
