STRAWBERRY RHUBARB MOCKTAIL

After an intense and emotional Winter, I’m delighted that Spring vibes are finally in the air and let me tell you, I’m here for it all! You see, I love it when apple blossoms and tulips start popping up in my neighbourhood park and adore it even more when the air begins to feel lighter, crisper and full of hope!

A new season calls for a brand new mocktail recipe and I can’t think of anything that shouts SPRING louder than strawberries and rhubarb, which is why they feature in today’s cute and colourful mocktail…

HOW TO MAKE THE PERFECT MOCKTAIL…

GLASSWARE - Our eyes eat first, but they also drink first! Glassware can make your mocktail look sophisticated and as classy as THE most iconic cocktails! So be sure to choose your glassware wisely!

FLAVOUR - In cocktails, flavour can be introduced by including pureed fruit, fruit juices, spices, teas, shrubs or syrups. Flavours can be deepened further through the use of sweeteners such as maple syrup, sugar or agave.

 

THAT LITTLE SOMETHING EXTRA - Unlike cocktails, mocktails obviously don’t include alcohol, so you want to be sure it incorporates something else that will allow it to shine and have some depth. I love adding something a little unexpected like ginger, a pinch of lime juice or a delicious kombucha.

DECORATE - You can always introduce an eye catching textured rim, edible flowers or a display of fruits, anything to make your beverage look special!

LIQUID ADDITION - To complete your cocktail, use sparkling water, kombucha, Sprite (or the equivalent), tonic water or tea.

STRAWBERRY RHUBARB MOCKTAIL RECIPE

Today’s mocktail is light, fresh, simple and perfect for a quick afternoon pick-me-up-and-make-me-smile kinda moment!

Preparation time: 5-7 min

Serves: 2

MOCKTAIL INGREDIENTS

1/2 cup washed and chopped sweet strawberries, stems removed

1/4 cup washed and chopped rhubarb

1-2 tbs sugar or agave syrup (depends on your preferred level of sweetness)

1 cup water

approximately 330ml (around 1 small can) sparkling water and a dash of fresh lime juice from 1/2 a lime (OR I used DASH LIME)

TO DECORATE

fresh strawberries

1 ginger snap cookie, crushed finely

1/2 lime

INSTRUCTIONS

Blend the strawberries, rhubarb, sugar and water until smooth. Set aside.

Coat the rim of your glasses with lime juice, then roll the rim in the ginger snap crumbs.

Add ice to your glasses.

Evenly distribute the blended fruit mixture in your prepared glasses, as it is, or pass the mixture through a strainer first.

Top with sparkling water.

Add a strawberry for fun and enjoy!
