In honour of World Suicide Prevention Day, I have teamed up with the charity, Beder UK who work tirelessly to raise awareness around mental health and suicide prevention.
I had the total honour of photographing their second cookbook, Eat With Beder last year; not only is the cookbook filled with over 70 delicious, unique and easy-to-follow recipes, but it’s also a major fundraiser for the Beder UK charity, which takes its name after Beder, a young and much loved teenager who tragically took his own life in 2019, leaving a huge void in the lives of those who knew and adored him.
As a mama to a pre-teen boy, Beder’s story touched my heart deeply and I’m hence honoured to bring this unique giveaway to you, to hopefully make a difference.

For those of you who’d like a taster before purchasing, here is a delicious soup recipe from Eat with Beder cookbook, which is a personal favourite of mine. The touch of miso and sun dried tomatoes in the soup give it a super umami flavour! It’s the perfect soup for the cooler weather coming our way this autumn and full of plant-based protein to keep you feeling fuller for longer!
HIGH PROTEIN Vegan Carrot and Red Lentil Soup
Preparation time: 10-25 minutes
Cooking time: 30 minutes
Serves: 4
INGREDIENTS
For the soup
Olive oil
1 red onion, peeled and diced
2 cloves of garlic, peeled and diced
2 carrots, peeled and chopped
3 sun-dried tomatoes, cut into small pieces
Pinch of salt
2 tsp smoked paprika
1 tsp brown rice miso paste
100g red lentils
1 tin full fat coconut milk
1 vegetable stock cube, mixed with 500 ml boiling water
Dash of almond milk, optional
To serve
Vegan double cream or vegan yoghurt
Black pepper
A handful of fresh basil, chopped
INSTRUCTIONS
Heat a drizzle of olive oil in a large pan over medium heat. Add the onion, garlic, carrots, sun-dried tomatoes and salt, mix well and cook gently for about 10 minutes or until carrots are soft.
Add the smoked paprika, cook for 2 more minutes and then mix in the rest of the ingredients.
Bring to a simmer and cook for about 15-20 minutes or until the red lentils are soft.
Blend the soup until nice and smooth, using a dash of almond milk if necessary to create the desired consistency.
To serve spoon the soup into bowls and garnish with yoghurt (or cream!), a drizzle of olive oil, some black pepper and some chopped basil.
